Txoko is the brain-child of NutriFit co-founder Jackie Keller and Executive Sous-Chef Oscar Gonzalez, born out of the early days of the COVID-19 pandemic and global shutdown. Seeing restaurants closing, communities fracturing, and people despairing in isolation, they realized the need for friends and family to engage in communal meals in the only way we safely could: virtually. Txoko was born out of this realization, that we are social beings and the gathering of people over the shared experience of delicious food and storytelling is part of what makes us human, and we could not lose that.
The possibilities of virtual experiences could be endless – from visiting exotic locales with groups of fellow culinary travelers, to private events with loved ones and colleagues who are need of ways to commune in our newly isolated world. Folding in the delicious produce from our own local, organic farm (SimpliHealth Growers™), Jackie and Oscar knew that Txoko was about more than guided people through world-class meals – it was about bringing people together to enjoy the experience of something inherently human and in need of saving; the shared experience of good food, good drink, and good stories, together.
Jackie Keller, Founding Director of SimpliHealth Growers and NutriFit LLC, studied at Le Cordon Bleu in Paris, France, and then went on to a career in the hotel industry.
After just a few successful corporate years, she decided to follow her passion for health by starting NutriFit, LLC, in 1987 with her partner (then husband) Phil Yaney.
SimpliHealth Growers was started in 2009 to formalize the operations of their small, sustainable farm on the central coast of California, where they grow organic vegetables, fruits and herbs, along with beehives.
Her mission is to produce extraordinary cuisine, thoughtfully prepared, with the goal of helping everyone live longer healthier lives!
Oscar Gonzales, our Executive Sous Chef, completed his PhD in Culinary Science and Level II Sommelier at the Culinary Institute of America, following his early culinary education at Ferrandi, the French School of Culinary Arts, and a Masters at Ecole Ritz Escoffier in Paris.
Formerly the Executive Chef at L’Espadon, the fine dining venue at the Ritz Palace in France, his extraordinary culinary talents earned the restaurant a Michelin star.
Oscar joined our team to bring upscale, exciting menus to tables across America and brings a level of expertise, dedication to culinary excellence and enthusiasm for sharing fantastic food that perfectly complements our efforts.
